After work today I headed over to Ranch 99 grocery to pick up some nori, coconut milk, and to see if there was anything there that might inspire a new recipe. That store is a very dangerous place for me; there are all kinds of yummy cookies and candy, and pastries that I love buying when I go there.  Any who I ended up purchasing what I needed and got out of there. (Except for coconut milk, they were sold out!) 

I also went to Marshalls before that and bought a beautiful glass bottle to store homemade almond milk in. I have an awful obsession for glass bottles and jars. I just think they are so beautiful, and I love all the different shapes and sizes and colors. For my 2 year wedding anniversary a dear friend of my mine gave me an antique blue mason jar. When I opened her gift I screamed and cried. For the record I am not a crazy person who cries over mason jars, I cried because a few months before I had mentioned to her that I think that antique blue mason jars are so beautiful, and the fact that she remembered that was very touching. Ruben said he should have just given me a box of jars as my anniversary gift. (I probably would have been very happy with that.)

Day 12


  Breakfast

  • Roasted vegetables
  • Baby carrots
  • Handful of almonds

My breakfast was sad again this morning. I should be packing it the night before so that I am not rushing in the morning to put something together.


Lunch

  • Leftover slow cooker chicken
  • Roasted veggies
  • Mashed turnip and cauliflower with roasted garlic

Snack: 1 organic peach

Dinner

  • 2 chicken nori wraps with chicken, avocado, red bell pepper, pea shoots, salt and pepper
  • 1 organic tomato
  • 1 mango
  • 1 peach

For the nori wrap I shredded some leftover chicken and diced up some vegetables and placed it on the nori and rolled it up. It was really tasty. I think it would make a great breakfast option as well.
