I am really really tired. So this will be quick

DAY 13

Breakfast

  • Shredded chicken mixed with grapes, red bell pepper, asparagus, avocado, cilantro, green onion, top with black pepper and raw sunflower seeds. 
  • 1 banana
I packed my breakfast last night, so this morning I actually had a decent meal. For this salad I normally like to add roasted sweet potato, but I didn't have any. To season it you can add olive oil or balsamic vinegar if you like. I prefer it plain.

Lunch

  • Slow cooker chicken
  • Turnip and cauliflower mash with roasted garlic
  • Asparagus
Snacks: blueberries

Dinner

  • Halibut
  • Brussels sprouts
  • Ratatouille
  • 1 tomato
Snacks: sweet potato fries

For dinner today I was so hungry that I went back for seconds, and that never happens. I also made ratatouille for the first time.  The recipe I used was from TheComfortofCooking. It was pretty easy, I didn’t have any tomato puree so I used tomato sauce instead. Just make sure that if you use tomato sauce that there is no added sugar. Always read your labels! The most time consuming step of the recipe is laying the vegetables out in the baking dish, I didn't enjoy that part very much. But other than that I think I would make it again, I really enjoyed the flavor, it was a very comforting dish.
