My lunch today was one of my favorite salads; its really simple and I usually have the ingredients on hand to make it.

- Moqueca- Brazilian fish stew
- Cauliflower rice
- Plantains
For dinner tonight I made moqueca, a Brazilian fish stew that has red and green bell peppers, onions, tomatoes, coconut milk, and pieces of halibut that have been marinated in lime juice and garlic. I served it on top of cauliflower rice, with a side of fried plantains. I feel like it could have used a bit of spice, but overall it was a very satisfying dish. The fish was tender, and the combination of the fish with the plantains was really good!
